Colorado Sake Company Has a Sweet New RiNo Taproom

Colorado's only sake maker expands with a tasting room, more taps, and food.

The Centennial State has just one sake producer to fill local-first Coloradans’ cups—but thankfully, it’s in expansion mode. In June, Colorado Sake Co. quadrupled its production capacity and enlarged its original 1,100-square-foot, off-alley taproom by taking over the former Wine & Whey space on Larimer Street. Now there are 12 fermented rice wines on tap (up from six) in its tasting room, which is decorated with whimsical DIY elements. Pillow-lined couches are made from pallets; origami creations hang from the ceiling; and a cherry blossom mural by co-owner Jennifer Eubanks serves as a backdrop for the menu, playfully spelled out with wood blocks. Sip on the year-old brand’s inventive infused sakes (we love the Green Machine, amped up with ginger, lime, cilantro, and jalapeño) alongside rice bowls, dumplings, and yakisoba delivered from neighboring speakeasy Millers & Rossi. Be sure to fold a paper crane to add to the decor; instructions and plenty of liquid encouragement are provided. 3559 Larimer Street
